Nut Milk

Blend until very smooth:

6 cups water

1-1/2 cups raw, unsalted cashews

6 dates

Pinch salt

A shake of powdered vanilla, optional


Keeps in the refrigerator for up to three days. Depending on your fridge, it might keep longer.


You can use half almonds if you prefer. If you want to avoid the dark flecks left by the almond skins, you can use blanched almonds.


If you want to make more or less milk, the formula is as follows: For each cup of water, use one date and 1/4 cup nuts.
