I made this for lunch today and it was yummy! Several people have asked for the recipe, so here it is! You can substitute broccoli for the cauliflower to make broccoli cheese soup.
Cook together until soft:
1¼ cups cooked potatoes
1½ cups cooked carrots
1 medium onion
½ cup cashews or sunflower seeds
3¼ cups water (use water from cooking vegetables)
1 tsp. salt
¼ cup yeast flakes
2 Tbsp. lemon juice
1/4 tsp. garlic powder
Pour into a pot. Then steam lightly:
4 cups cauliflower, cut in bite sized pieces
Add cauliflower to sauce and heat through.
